Our daughter made these banana pancakes for us, and we absolutely loved them!
The Overview of how to Make it
Combine dry ingredients in a bowl.
Blend milk, bananas, oil, and egg in a blender (or in a second bowl).
Stir dry ingredients into banana mixture.
Scoop 1/4 cup of batter onto oiled pan to cook.

Tips
- For a smooth pancake batter, I recommend using a blender to blend the banana with the liquid ingredients. This eliminates the need for prepping the banana beforehand as well.
- If blending wet ingredients in a second bowl, mash the banana before adding the other ingredients.
Can anything be made Ahead of Time?
- Yes, the batter can be prepared the night before.
Ingredients
1 cup flour
1 tbs sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 cup milk
2 tbs coconut oil
2 ripe bananas
Directions
Combine flour, sugar, baking powder, and salt in a small bowl.
Blend in a blender the egg, milk, oil, and bananas.
Stir flour mixture into the banana mixture.
Heat a pan, oil with coconut oil.
Scoop 1/4 cup per pancake onto pan, bake 3-5 minutes per side.
Stack ’em high! Enjoy.
The natural sweetness of the bananas in the pancake batter renders the need for additional sweeteners optional.
