This is a one pot recipe!
Kitchen Kit
a cutting board, knife, and a vegetable peeler
a large pot, a wooden spoon
an immersion blender or a stand-up blender
Ingredients
- 4 cups onions -chopped
- 2 tbs butter
- 2 tbs olive oil
- 2 tbs mild curry powder
- 2 cups water
- 5 lbs butternut squash – peeled, cut into chunks
- 4 apples – peel, core & chunk
- 2 tsp salt
- 1/2 tsp pepper
- apple juice
Directions
- In a large pot, sauté the chopped onion in butter, olive oil and the curry powder.
- Add the water, butternut and apple chunks. Bring to a boil and simmer for 35-40 minutes until everything is soft.
- In the same pot, blend everything with an immersion blender.
- Add salt & pepper to taste.
- Add apple juice for desired soup consistency.

For a Terrific Butternut Squash Soup
- Some butternut squash soup recipes incorporate other vegetables to sauté alongside the onions, such as carrots, potatoes, and celery.
- Another idea is to use a stock instead of water. Chicken or vegetable stocks work well.
- Spice things up! Work with the spices you enjoy, perhaps nutmeg & cinnamon, or cumin & ginger.
- Need a natural sweetener, try adding a tablespoon of maple syrup to the soup.
- If you want a creamier butternut squash soup, substitute the apple juice for some decadent heavy cream or make it dairy free by adding flavorful coconut milk.
- If you don’t have an immersion blender, everything can be puréed in a stand-up blender.
