A lot of Options

For a Terrific Butternut Squash Soup

  • Some butternut squash soup recipes incorporate other vegetables to sauté alongside the onions, such as carrots, potatoes, and celery.
  • Another idea is to use a stock instead of water. Chicken or vegetable stocks work well.
  • Spice things up! Work with the spices you enjoy, perhaps nutmeg & cinnamon, or cumin & ginger.
  • Need a natural sweetener, try adding a tablespoon of maple syrup to the soup.
  • If you want a creamier butternut squash soup, substitute the apple juice for some decadent heavy cream or make it dairy free by adding flavorful coconut milk.
  • If you don’t have an immersion blender, everything can be puréed in a stand-up blender.
