Overview of How to Make this Recipe:

  1. Cube the chicken breast. Add salt, pepper, and coat with corn starch.
  2. Lightly beat 3 eggs in a shallow dish.
  3. Heat oil in a high-walled pot.
  4. Dredge coated chicken pieces in egg, and cook in hot oil until golden brown.
  5. Mix sauce ingredients. Pour sauce over chicken pieces and toss to coat.
  6. In a baking dish, bake at 325 degrees for 1 hour.

Sweet & Sour Chicken

Ingredients

chicken breasts – about 4 boneless, skinless

salt & pepper

3/4 cup cornstarch

3 eggs, slightly beaten

1/4 cup oil – canola, vegetable, olive – more if needed

1/2 cup apple cider vinegar

4 tbsp ketchup

1 tbsp soy sauce

3/4 cup sugar – or less, to taste

1 tsp garlic salt

Instructions:

  1. Cube chicken into 1 inch pieces.
    • Season with salt & pepper.
    • Add 3/4 cup cornstarch to chicken and toss to coat.
  2. In a shallow dish, whisk together the 3 eggs.
  3. Heat 1/4 cup oil in a large, heavy bottomed, high-walled pot.
    • Dip the cornstarch-dredged chicken pieces into the beaten egg, coat, and transfer to the hot oil.
    • Cook chicken about 30 seconds per side just until golden brown.
    • Continue dipping and cooking all the chicken pieces.
  4. Combine all the sauce ingredients in a large bowl – the apple cider vinegar, ketchup, soy sauce, sugar, and garlic salt.
    • Taste-test the sauce to your liking.
    • Add all the golden brown chicken pieces to the large bowl and coat with the sauce.
    • Once nicely coated, pour everything into a 9×13 baking dish.
  5. Bake uncovered at 325 degrees for 1 hour.
    • Turn the chicken once or twice during the baking to coat everything nicely in the sauce.

Suggestions

  • Add sliced onions to the sauce to mix in with the chicken prior to baking.
  • Add cubed pineapple to the sauce to mix in with the chicken prior to baking.
  • Serve over steamed white rice.
  • Serve with a side of steamed broccoli.
