A New Favorite
Thai Cashew Chicken is a new favorite at our house. Chopping the vegetables and chicken is practically the only thing to do. Once the chicken is sautéed, everything goes into the slow cooker for a couple of hours. When cooked, the sauce is thickened, cashews can be added, and dinner is served!

The broccoli soaks up the savory sauce and makes the broccoli taste delicious!

Overview:
- Cube boneless chicken breast and toss in a medium bowl with cornstarch, salt, and pepper.
- Chop the vegetables into bite size chunks.
- In a small bowl, combine ingredients to make the sauce.
- Sauté cubed chicken.
- Add chicken, vegetables, and sauce to slow cooker for 2-3 hrs.
- Thicken sauce with cornstarch slurry.
- Stir in cashews and keep warm.
Ingredients
The Chicken:
Chicken breast
cornstarch
salt & pepper
The Vegetables:
broccoli
red bell pepper
The Sauce:
soy sauce
rice vinegar
honey
ginger
garlic
The Cashews:
Have some on hand to add at the end of the recipe.

Directions
The Chicken:
- Cube the chicken
- Toss the chicken pieces with cornstarch, salt & pepper.
The Vegetables:
- Chop the vegetables of your choice. In my case, broccoli & sometimes red bell pepper.
The Sauce:
- Combine all the sauce ingredients in a small bowl.
Cooking:
- Sauté the cubed chicken until browned in oil of your choice.
- Spray slow cooker with non-stick spray.
- Transfer the browned chicken, the chopped vegetables, and the sauce into the slow cooker.
- If you prefer your vegetables crunchier, add them later in the cooking process.
- Cook on LOW setting for 2-3 hours.
- When chicken is thoroughly cooked, strain sauce into a small saucepan to thicken with a cornstarch slurry.
- Add thickened sauce back to slow cooker, add cashews, stir, and keep warm until ready to serve.
I simply estimate the amount of chicken & vegetables which seem appropriate for our family.
