How about transforming this year’s Jack-o-Lantern into Pumpkin Purée. Pumpkin Purée can be used in all types of delicious recipes! This year I decided to put our pumpkin through double duty.
Eating for Nutrition
- Vitamins A, C, E
- Fiber
- Potassium, Magnesium, and Iron
Kitchen Kit
- Large knife
- Vegetable peeler (optional)
- Pan
- Food processor
Ingredients
- Pumpkin
- Water

How To
- Assuming your pumpkin is last night’s jack-o-lantern like mine, it has already been scooped clean.
- If that’s not the case, proceed to cut the pumpkin open, and scoop out the inside strings & things.
- Pumpkin seeds may be saved for a different preparation.
- Bake pumpkin until it is soft.
- Baking can be done whole, in large chunks or cubed. Really, anything goes!
- I used the most labor intensive way by entirely cubing the pumpkin and then roasting it. Next year I plan to simplify, by cutting the pumpkin into quarters, then roasting it with a dab of water, and then scooping the meat out of the peel.
- Place the soft pulp into a food processor and purée. If your pulp seems dry or crumbly, add small amounts of water as you run the food processor.
