Ingredients:

  • Wet:
  • 1 banana = 1/4 cup (a really ripe one) – mashed
  • 1/4 cup sour cream
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • Dry:
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups flour: possible options:
    • 1 1/2 cup all-purpose flour
    • or
    • 1 cup whole wheat flour with 1//2 cup almond flour mixed with flax-seed meal
  • Add Ins:
  • 1 1/2 c zucchini – grated
  • 1/2 cup mini chocolate chips

How To:

  1. In a large bowl mix: butter and sugar. Add & blend: banana, sour cream, egg and vanilla.
  2. In smaller bowl, mix dry ingredients: baking soda, nutmeg, cinnamon, salt and flour.
  3. Gently fold dry ingredients into the wet.
  4. Add Ins: add the zucchini and chocolate chips.
  5. Bake @ 350 degrees for 18-20 minutes.
