Ingredients:
- Wet:
- 1 banana = 1/4 cup (a really ripe one) – mashed
- 1/4 cup sour cream
- 1/3 cup butter
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- Dry:
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cups flour: possible options:
- 1 1/2 cup all-purpose flour
- or
- 1 cup whole wheat flour with 1//2 cup almond flour mixed with flax-seed meal
- Add Ins:
- 1 1/2 c zucchini – grated
- 1/2 cup mini chocolate chips
How To:
- In a large bowl mix: butter and sugar. Add & blend: banana, sour cream, egg and vanilla.
- In smaller bowl, mix dry ingredients: baking soda, nutmeg, cinnamon, salt and flour.
- Gently fold dry ingredients into the wet.
- Add Ins: add the zucchini and chocolate chips.
- Bake @ 350 degrees for 18-20 minutes.
