Overview

1 Grate zucchini.

2. Combine first 4 ingredients in large bowl (or stand up mixer).

3. Combine dry ingredients in smaller bowl.

4. Gently combine dry ingredients into wet ingredients.

5. Bake in loaf pan 40-45 minutes.

Ingredients:

1 ½ cups shredded zucchini

¾ cup white sugar

1 egg

½ cup vegetable oil

1 ½ cups all-purpose flour

½ teaspoon salt

½ teaspoon baking soda

¼ teaspoon baking powder

1 teaspoon ground cinnamon

2 teaspoons lemon zest

Directions:

A. In your larger bowl: Mix zucchini, sugar, egg, and oil (I used olive oil).

B. In your smaller bowl whisk: flour, salt, baking soda, baking powder, cinnamon and lemon zest.

C. Gently stir dry into wet zucchini mixture until just mixed. Pour into greased loaf pan. Bake 40-45min @ 325 degrees.

Zucchini is an excellent source of vitamin C, potassium, and folate, all of which are essential for good health.
