Kitchen Kit
- a stand-up mixer
- a large bowl
- 2 loaf pans
I highly suggest a stand=up mixer to make the process easier. No additional hand-kneading required!
Overview of how to Make this:
- Prepare the oat mixture in your stand-up mixer.
- Prepare the yeast in a small bowl.
- Combine yeast & egg into the oat mixture. Mix.
- Add the flour to the stand up mixture. Mix.
- Let rise. Sip some coffee, dance to some tunes, or relax time.
- Punch down, divide into loaves.
- Let rise. More coffee time, read a book, or go for a walk.
- Bake.
An Additional Bonus: This recipe makes two loaves.

Overview:
- 2 cups boiling water
- 1 c oats
- 1/3 c honey
- 2 tbs butter
- 2 tsp salt

Stand up mixer.
- 1 package active dry yeast
- 1/2 c warm water
- 1/4 tsp of sugar
B
Into a small bowl.
- 1 egg
- 4 1/2 c spelt flour (or combination of flours)

Ingredients
- 2 cups boiling water
- 1 cup oats
- 1/3 cup honey
- 2 tbs butter
- 2 tsp salt
- 1 package active dry yeast (this equals 2 1/4 tsp)
- 1/2 cup warm water
- 1/4 tsp sugar
- 1 egg
- 4 1/2 cups spelt flour (or a combination of flours)
Directions
- In a stand up mixer, combine all of the A ingredients. Set aside.
- In a small bowl, place B ingredients. Let stand for 10 minutes.
- Pour yeast mixture into A.
- Add egg. Mix. Add flour. Mix.
- Oil a large bowl. Add dough and turn to coat dough with oil. Cover with towel, and let rise for 1 hour.
- Punch dough. Divide dough into two. Form loaves and place into oiled loaf pans. Let rise for 40 minutes. Preheat oven to 375.
- Bake 30 minutes.
The flavor is sweet and slightly nutty, and a great accompaniment to a variety of dishes.
