The Ingredients

  • Pork
    • Examples: pork shoulder blade roast, pork sirloin roast, pork loin center roast
  • Sauerkraut
  • Barley

The Directions

  1. Place the pork roast into a large pot.
  2. Add sauerkraut around the pork.
  3. Add barley on top of the sauerkraut.
  4. Fill with water until barley is covered.
  5. Bring to boil, and then reduce heat to a medium-low simmer.
  6. Simmer the pork on the stove-top for several hours until it becomes tender and easily pulls apart. Throughout the cooking process, check and stir the mixture to prevent burning and ensure even cooking. If the liquid is absorbed and begins to evaporate, add additional water in increments to continue the cooking process. As you near serving time, stop adding water to maintain the desired consistency of soft pork and a flavorful mix of sauerkraut and barley.

Barley contains compounds that can help lower blood pressure and reduce the risk of heart disease.

Tips

Best served with mustard. Our preference is honey-mustard.
