Dice all the vegetables.

In a casserole dish, mix rice with oils. Add garlic & diced vegetables.

Mix liquid ingredients in a bowl. Pour over rice & stir.

Cover and bake.

This is a great side dish to make instead of steamed white rice.

  • diced carrots
  • diced red bell pepper
  • green peas
  • sliced onions
  • chopped cauliflower
  • diced ham
  • diced BBQ pork

What can be done Ahead of Time

All the add-ins for this recipe can be chopped ahead of time.


2 cups rice

2 tbs olive oil

1 tbs sesame oil

3 cloves garlic, crushed

1/2 c diced carrots

1/2 c green peas

1/2 c cauliflower (instead you can use red bell pepper or diced ham)

3 c chicken broth

3 tbs soy sauce


1..Place rice into a large casserole dish. Add olive and sesame oils to the rice and mix to coat well.

2. Add garlic, carrots, peas, cauliflower. Combine well.

3. In a separate bowl, combine chicken broth and soy sauce. Pour mixture onto the rice and stir. Cover dish tightly with foil.

4. Bake in a 400 degree oven for 32 minutes.

5. Remove and let stand for 10 minutes. Uncover and fluff with fork.
